So here is what you need:
- 8 oz. dry whole grain linguini pasta - $3.48 (you can find it cheaper but we went with some fancier stuff)
- 1 small zuchinni, sliced - $0.58
- 1 small yellow squash, sliced - $1.08
- 1/2 medium red bell pepper, sliced - $0.88 / 2 = $0.44
- 1/2 medium red onion, sliced - $1.10 / 2 = $0.55
- 14.5 oz can diced Tomatoes with basil, garlic & oregano - $2.49 (once again you can find it much cheaper but we went with organic)
- Olive Oil
- 1 tsp dried oregano, 1/2 tsp salt, and 1/4 tsp pepper

- cook pasta; drain and keep warm in pan
- place zuchinni, squash, bell pepper & onion in large bowl. Drizzle olive oil and toss to coat. Sprinkle with oregano, salt and pepper and toss again.
- Heat skillet over high. Add veggies and cook approx 6-12 minutes (we like them soft), stirring frequently.
- Add undrained tomatoes to veggies and mix well. Then add veggies to pasta and toss well until mixed.
- Then we grate fresh parmesan over it... yummy!
It feeds about 3 to 4 people....and the best part is it only costs approximately $8.62 (or cheaper) which comes out to $2.87 a person if you are feeding three and $2.16 a person if you are feeding four (and assuming you already have the oil and spices)! Enjoy!
